It’s melt-your-face-off hot in Mumbai and I’ve traded all my harsh denims for breezy drawstring shorts. With ample sun out there to bring on a heatstroke, you’ll always find me poring over long beakers of flavoured water, stirring up jugs of ruby-red sangria or pouring out spiked lemonade to compensate for never starting my own lemonade stall when I was 11.
When I’m making tall, chilled, fizzy drinks, Chandon is my obvious choice of sparkling wine to top up a glass. This blush-pink spritzer is part-fresh fruit, part-lemonade, and all bubbly. Watermelons are particularly sweet right about now, so ask to taste some before you buy.
Ingredients (makes two):
Watermelon 1 cup, chopped into cubes
Simple syrup 2 tsp
Lemon juice 2 tsp per glass
Chandon Brut chilled, for topping up
Chill the glasses that you will be serving your spritzer in.
Add the chunks of watermelon to the glass, followed by the simple sugar syrup and lemon juice. At this stage, you can also puree the watermelon together with the lemonade mix.
Top the watermelon mix with chilled Chandon Brut and clink to the summer.
