Don’t restrict your bundt pans to just cakes. You can make a host of other things in them such as this panna cotta with jelly. This simple recipe for a boozy panna cotta with a chai jelly is a great way to go out after a heavy meal. It is light, bouncy and the double kick of orange really comes through. It’s not too sweet and this works as a great base recipe if you want to play around. Off the top of my head, I would infuse the chai jelly with spices or I’d swap the liqueur in the chocolate for something more adventurous.
INGREDIENTS
The Chai Jelly
Water 4 cups
Loose chai 1 tbsp
Powdered gelatin 2 tbsp
Sugar 1/4 cup
The Panna Cotta
Water 1 cup
Powdered gelatin 2 tbsp
Cream 2 cups
Milk 1 1/2 cups
Cointreau 1/4 cup, or swap with another liqueur of your choice
Good quality cocoa powder 1/4 cup
Sugar 1/2 cup
Orange 1, zested
Butter for greasing
METHOD
Start by making the panna cotta. Heat a cup of water until it is about to boil. Then stir in the gelatin powder till properly dissolved. Lower heat to a simmer and add in the milk, cream, the liqueur, cocoa powder and sugar and stir till everything has dissolved. Pour this mixture into a well-greased bundt pan and let it cool for about an hour. Transfer to the refrigerator. After 2 hours at least, check on the panna cotta to see if it has set. If it has, don’t get it out of the refrigerator and start on the next step.
Heat 4 cups of the water until it is just about to boil. Add to this the loose leaf tea and let it steep for 4-5 minutes. Strain the tea out and add the powdered gelatin, sugar and stir till it has all dissolved. Let this mixture sit at room temperature till lukewarm. Then, get the bundt pan out of the refrigerator and splash the lukewarm tea jelly mixture over the top and place it back into the refrigerator to set, for 4 hours or overnight.
To unmould, fill a bowl big enough to accommodate the bundt pan with warm water. Run a thin knife only at the top bits of the bundt to release any jelly that might hinder it coming out of the mould. Lower the bundt pan up till the rim into the warm water and hold it there for 3 seconds. Then pull it out and unmould onto the prepared plate.
